I am torn as to what to name my latest creation. #Hemp cups🙊 might lead to all sorts of raised eyebrows😯 and #SunButter cups might suggest that I am high on the former....🙈 So, we shall call these goodie cups by the nutrient they provide: #PROTEIN! No Bake Protein Cups Ingredients 2 cups blueberries, fresh or dried 11 oz bag butterscotch chips 1/2 cup sunflower seed butter 5 tbsp. unsalted butter, #ButterIsBack👯 1/2 cup hemp seeds, shelled 1/4 cup ground flaxseed meal You will need: A mini muffin pan or, Mini cupcake liners. Instructions Pour blueberries into a large bowl. Set aside. In a saucepan over medium heat, melt the butterscotch chips, sunflower seed butter and butter, stirring constantly. Add hemp seeds and flaxseed meal. Once the mixture is melted and smooth, remove from heat and let cool for 5 minutes, stirring occasionally. Pour mixture over blueberries, folding until blueberries are completely coated. Spoon mixture into cupcake liners.
